Pão de Queijo (Brazilian Cheese Bread)

Crisp outside, chewy and cheesy inside. Made with tapioca flour, so naturally gluten-free.

    Method

    1. Heat the oven to 200 °C (400 °F) and line a tray with baking paper.
    2. Bring the milk, water, oil and salt to the boil. Pour over the tapioca flour and stir until it forms a sticky dough. Cool for 10 minutes.
    3. Beat in the eggs one at a time, then the cheese, until smooth and stretchy.
    4. With oiled hands, roll into walnut-sized balls and space them on the tray.
    5. Bake for 20–25 minutes until puffed and golden. Eat warm.
    Cook's tip: Freeze the shaped balls and bake straight from frozen, adding 5 minutes.
