Palak Paneer

Soft cubes of paneer in a vivid, gently spiced spinach sauce. A North Indian restaurant favorite that is easy at home.

    Method

    1. Blanch the spinach in boiling water for 1 minute, then plunge into ice water. Squeeze out and blend with the green chili and a little water to a smooth purée.
    2. Heat the oil, add the cumin seeds, then the onion and cook until golden. Add the garlic and ginger for 1 minute.
    3. Add the tomatoes, coriander, turmeric and salt and cook until soft and jammy.
    4. Stir in the spinach purée and simmer for 5 minutes, adding water if it is too thick.
    5. Add the paneer and garam masala and simmer for 3 minutes. Stir in the cream and serve with rice or naan.
    Cook's tip: The ice-water bath keeps the spinach bright green.
