Chicken Teriyaki

Crispy-skinned chicken glazed in a glossy homemade teriyaki sauce made from just four ingredients.

    Method

    1. Mix the soy sauce, mirin, sake and sugar.
    2. Pat the chicken dry. Put it skin-side down in a cold pan with the oil and turn the heat to medium.
    3. Cook for 8–10 minutes until the skin is deep golden and crisp, pressing it flat. Turn and cook for 3 minutes more.
    4. Pour off excess fat, add the sauce and simmer, spooning it over the chicken, until thick and glossy.
    5. Slice and serve over rice with sesame seeds and spring onion.
    Cook's tip: Use tamari instead of soy sauce for a gluten-free version.
