Nasi Goreng

Indonesia's sweet, savory fried rice with kecap manis and chili, crowned with a fried egg.

    Method

    1. Pound or blend the shallots, garlic, chilies and shrimp paste to a coarse paste.
    2. Fry the paste in the oil over medium-high heat for 2 minutes until fragrant.
    3. Add the chicken or prawns and cook until done.
    4. Add the rice, kecap manis and soy sauce and stir-fry for 3–4 minutes until hot and evenly colored.
    5. Fry the eggs. Serve the rice topped with an egg, with cucumber, tomato and crispy shallots.
    Cook's tip: Leave out the meat and shrimp paste for a vegetarian version.
