Menemen (Turkish Scrambled Eggs)

Soft eggs stirred through sweet peppers and juicy tomatoes. A Turkish breakfast staple, best eaten with fresh bread.

    Method

    1. Heat the oil in a pan and cook the peppers for 5 minutes until soft.
    2. Add the tomatoes and salt and cook for 5–7 minutes until most of the liquid has evaporated.
    3. Lightly beat the eggs and pour them in. Stir gently over low heat until just set and still soft.
    4. Sprinkle with pul biber and parsley and serve straight away.
    Cook's tip: Some add onion, some never would. It is a famous Turkish debate; try both.
