Silky Hummus
Smooth, creamy hummus with plenty of tahini and lemon. The trick for silkiness is ice-cold water and a long blend.

Method
- Blend the lemon juice, garlic and salt and leave for a few minutes to mellow the garlic.
- Add the tahini and blend until thick and pale.
- With the motor running, add the ice water a little at a time until the mixture is creamy.
- Add the chickpeas and cumin and blend for 3–4 minutes, scraping down the sides, until very smooth.
- Spread in a shallow bowl, drizzle with olive oil and dust with paprika.
Cook's tip: For even smoother hummus, simmer the chickpeas for 15 minutes with a pinch of baking soda and rub off the skins.
